Ingredients
- 3/2 cups mashed ripe bananas (about 3 bananas)
- 1/3 cup melted coconut oil or melted butter
- 3/4 cup dark muscovado or dark brown sugar
- 1/4 cup full-fat coconut milk or yogurt or sour cream
- 2 large eggs lightly beaten
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 3/4 tsp baking soda
- 1/2 tsp fine sea salt
Instructions
- Preheat oven to 175¡ãC (350¡ãF). Lightly oil a 9*5-inch (23 x 13 cm)loaf pan.
- Mash bananas in a large bowl until mostly smooth.
- Mix in melted oil, sugar, and coconut milk.
- Add eggs and vanilla; stir until combined.
- Fold in both flours, baking soda, and salt until just mixed.
- Pour batter into the prepared pan and smooth the top.
- Bake 50 minutes or until a toothpick comes out clean.
- Cool for 10 minutes, then transfer to a rack to cool completely.
Tip: Use overripe bananas for extra sweetness and aroma!
