  1. Preheat oven to 175¡ãC (350¡ãF). Lightly oil a 9*5-inch (23 x 13 cm)loaf pan.
  2. Mash bananas in a large bowl until mostly smooth.
  3. Mix in melted oil, sugar, and coconut milk.
  4. Add eggs and vanilla; stir until combined.
  5. Fold in both flours, baking soda, and salt until just mixed.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake 50 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes, then transfer to a rack to cool completely.

Tip: Use overripe bananas for extra sweetness and aroma!

For a richer texture, sprinkle a handful of chopped walnuts or dark chocolate chips into the batter before baking. You can also top the loaf with banana slices for an artisan finish!
